Course Objective To know production, applications in food processing and the importance of the food gums.
Course Content Food gum classifications, economical importance of gums, functions of gums in foods, emulsification, stabilization, rheology of gums, natural plant exudates, seed gums, seaweed extracts, production of gelatin, mechanism of gel forming, identification of hydrocolloids and analysis methods of gums. .
