Course Objective Give an information about nutrition-toxicology relationship.
Course Content Nutritional toxicology discusses the role of nutrients in protecting the body against toxicants. It explores the overall importance of the metabolism of xenobiotics and antioxidant nutrients in their increasingly important role in protecting against oxidative damage generated by free radicals. Also discusses components of the diet that can influence metabolism of drugs, and xenobiotic metabolism. Topics are: antioxidant nutrients and protection from free radicals, the role of nutrients in detoxification mechanisms, foods derived from genetically modified crop plants, interactions between foods, nutritional supplements and drugs, phytosterols in human health, biotechnology-derived and novel foods: safety approaches and regulations, and carcinogens.
