Course Objective The aim of the course is to present to students general information on starter culture technology and its application in food industry. To be provide knowledge of starter cultures, starter culture production methods and tools. To be learn to the basic concepts of starter culture using.
Course Content Starter cultures and their importance for fermentation technology. Growth parameters and biochemical pathways. Isolation and identification methods of new cultures for food. Strain improvement and screening. Long-term preservation methods of starter cultures. Cultures properties, functions, criterion of strains for being a starter. Probiotics and their properties. Starter production technology and commercial starters. Factors affecting starter activity; antibiotics, disinfectants, bacteriophages. Quality control in starter cultures.
