Course Objective The goal of this course includes to inform students regarding in physiochemicals milk and milk products
Course Content Secretion and composition of milk and main factors that affects the composition of milk. Physical properties of milk. Milk fat, proteins and physiochemistry of lactose, minerals of milk, enzymes and other minor compounds. Microbial contamination and microorganisms in milk. Influence of high and low temparatures applications at milk. Physiochemicals of yoghurt, cheese and butter formation. .
